Tortilla Pizza

Makes one pizza

This is more of a method than a recipe, but a tortilla is a surprisingly good substitute for a true pizza crust. It's not quite as tasty, but it gets nice and crispy if the pizza isn't over-topped and it's a whole lot less work. Perfect for spur of the moment pizza cravings. -L


  • 1 flour tortilla
  • spray oil
  • whatever pizza toppings you desire (pictured: olive oil, garlic salt, cherry tomatoes, artichokes and mozzarella)

Preheat the oven to 400. Line a baking sheet with aluminum foil and put in the oven to heat up. After about 10 minutes, remove. Without burning yourself, spray the sheet with oil and put the tortilla on it. Top as you like, but keep in mind that putting too many heavy toppings can make the final crust not as crispy. Return to the oven and cook 7-10 minutes. If the top hasn't browned, turn the broiler on and give it just a bit, watching carefully to be sure it doesn't burn. Remove and give it a few minutes to cool and enjoy.
