Roasted Garlic Spread

Use this to flavor sauces and dressings or just spread directly onto bread

Ingredients

  • One garlic head
  • 2 tsp olive oil
  • pinch salt

Remove the papery outer skin from the head of garlic. Slice 1/2" off the top of head and drizzle the cut end with olive oil and salt. Roast in a baking dish or on a baking sheet until soft and golden, 30 to 40 minutes. Remove from the oven and wait for the garlic to cool down enough to handle. Use your hand or set of tongs to squeeze the head at the root end - the cooked garlic should side easily out of the remaining skins. Any stubborn cloves can be squeezed individually. Mash the garlic with a fork until it forms a paste. Use immediately or refrigerate covered for up to a week.
