Roasted Brussels Sprouts with Bacon


Original recipe

Serves 4 to 6


  • 10 oz brussels sprouts, halved or quartered if very large
  • 1 to 2 cloves garlic, large minced
  • 2 bacon slices, diced (optional if you want to go vegetarian)
  • 1 ½ Tbs olive oil
  • salt & pepper
  • splash white wine, balsamic vinegar or lemon juice(optional)

Preheat the oven to 400. Toss the brussels sprouts, garlic and bacon together in a baking dish and sprinkle liberally with salt and pepper. Drizzle the olive oil over everything and toss again to coat. Bake uncovered for 8 to 10 minutes, stir everything in the dish again, rotate and bake for another 8 to 10 minutes. Remove from the oven and splash with the wine, vinegar or juice to deglaze the pan, using a utensil to scrape up any brown bits from the surface of the pan. Serve as a hearty side dish or over pasta.
