Mole-Inspired Rub

Makes about 1 cup

Excellent on pork.

Ingredients

  • 3 Tbs ancho chile powder
  • 1 Tbs dark brown sugar
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp cocoa
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 Tbs salt
  • 2 tsp grated garlic

Whisk ingredients together. Use 1 to 2 Tbs of rub per pound of meat.
