L’s Quick and Dirty Alfredo

I rely on this recipe more than I ought to admit, but it’s fast and made out of ingredients I always have on hand and I am always up for it. I usually throw in at least some sun dried tomatoes, but it goes with all manner of meat and veggies - shrimp, ham, spinach, artichokes, brussels sprouts with bacon, broiled cherry tomatoes, whatever.

Ingredients

  • long pasta like spaghetti or linguine
  • 1 to 2 tsp minced garlic
  • pinch red pepper flakes
  • ½ tsp lemon juice, if lemon flavored desired add more and a little zest
  • 1 Tbs butter
  • ¼ c parm (freshly grated highly recommended)
  • ¼ c cream
  • salt & pepper

Cook the pasta. Drain and leave pasta in a colander. Returning the pot to the stove on medium low, melt the butter. Stir in the pepper flakes and garlic and cook for about 30 seconds. Return pasta to the pan, add lemon juice and toss to coat. Add cream and zest and toss again. Dump in parmesan and salt and pepper, along with any cooked meat of vegetable you wish. Adjust seasoning and serve.
