Karaage (Japanese Fried Chicken Nuggets)

Serves 2 to 4

The potato starch can be substituted with corn starch, but the coating won't be as good.


  • 1 lb boneless, skinless chicken breasts cut into bite sized pieces
  • 3 Tbs soy sauce
  • 1 Tbs rice wine
  • 1 Tbs ginger, grated
  • 1 - 2 cloves garlic, minced
  • ⅓ c potato starch
  • lemon wedges
  • hot sauce

Stir together the soy sauce, rice wine, ginger and garlic. Toss the chicken in the mixture and marinate for 30 minutes.

Dredge the chicken in potato starch and deep fry in a neutral-flavored oil until a deep golden brown.

Serve with the lemon and hot sauce.
