Hot Slaw

Makes a whole bunch. Seriously, this would feed a crowd.

I think this is meant as a side dish, but it's really good on tacos too. -L

Ingredients

  • 1 medium head of red cabbage, thinly sliced
  • Juice of one lemon
  • Juice of one lime
  • 1 1/2 tsp sugar
  • 2 tsp kosher salt
  • 2 small serranos
  • 1 garlic clove, minced
  • 1 tbs vegetable oil
  • 1/2 stick butter
  • 1 large red onion
  • 2/3 c chopped cilantro

In a large bowl, combine the cabbage with the citrus juices, sugar, salt and serranos and let marinate for 15 to 30 minutes.

Heat a large skillet on medium high and saute the onion in the oil for 2 to 3 minutes. Add the garlic and cook for another 30 seconds. Raise the heat to high and add the cabbage mixture. Toss until very hot, but still crisp, 2 or 3 minutes.

Remove the pan from the heat and add the butter and cilantro and toss until the butter is melted and evenly distributed. Add salt if needed and serve hot.
