Ham and Asparagus Quiche

One pie

Put whatever ingredients in this quiche that makes you happy. We've never actually made this with Gruyère cheese because it's too expensive but hey, I bet it's good.


  • 1/2 premade pie crust
  • 10 ounces asparagus spears, cut on the diagonal into 1-inch long pieces
  • 1/2 pound ham, cut into 1/4-inch cubes
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 1/2 cups Gruyère or Swiss cheese, grated
  • Butter, for sauteeing
  • Salt, pepper, and paprika, to taste

Preheat oven to 350°F and fit pie crust into a pie pan. Poke holes in the bottom of the crust with a fork and bake empty for about 20 minutes or until light gold. Remove from oven and let cool on a wire rack while preparing filling.

Heat butter over medium high heat. Add asparagus and cook, stirring frequently, for 8 to 10 minutes. They should be slightly browned and still firm.

Increase oven temperature to 375°F. Sprinkle half the cheese evenly over the bottom of the crust. Spread asparagus and ham over the cheese and then top with remaining cheese. In a medium bowl, whisk together milk, cream, and eggs. Season with fresh ground pepper, salt, and paprika. Pour over cheese.

Transfer to oven, and bake until just set in the center, 30 to 35 minutes. Cool on a wire rack for about 10 minutes before slicing.
