Ginger Garlic Green Beans

Serves 4

Ingredients

  • 1 lb green beans, trimmed
  • 3 garlic cloves, minced
  • 1 Tbs soy sauce
  • 1 Tbs fresh ginger, peeled and minced
  • 2 tsp rice vinegar
  • 1 Tbs vegetable oil
  • ½ tsp sesame oil
  • 1 ½ tsp toasted sesame seeds

Add the green beans at ¼ c water to the skillet and cover and cook for 8 to 10 minutes, until the green beans are bright green. Uncover and cook until all the water has evaporated. While they are steaming, mash the garlic and into a paste, then stir together with the soy sauce, ginger, vinegar and oils in a large bowl. Toss this with the cooked beans and sprinkle with sesame seeds.
