Compound Butter

Garlic, Lemon, and Herbs: original

Makes 1/2 cup

For finishing meat, on hot bread, to cook vegetables in - flavored butter has innumerable uses.


  • one stick butter, room temperature

Garlic, Lemon and Herbs

  • 1 tsp garlic, finely minced or even better, garlic spread
  • 1 tsp fresh ground pepper
  • 1/2 Tbs lemon juice
  • 1 tsp lemon zest
  • 2 tsp herbs of your choice (fresh rosemary, thyme and oregano or herbs de provance are favorites)


  • 2 Tbs fresh mint, chopped fine
  • 1 Tbs lime juice
  • 1 tsp lime zest

Whip butter and flavorings together and use as you would any finishing butter.
