Cocoa Sandwich Cookies with Orange Cream

Makes 3 dozen cookies

For the record, John thinks these cookies are too much work for how good they are. Everyone else disagrees though.



  • 1 1/4 c AP flour
  • 1/4 c unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 c butter, room temperature
  • 3/4 c sugar
  • 1 egg
  • 1/4 tsp vanilla
  • 1/2 tsp orange extract

Cream Filling

  • 1/4 c powdered sugar
  • 1/2 stick butter, softened
  • 1 Tbs orange juice
  • 1/4 tsp orange extract

In a large bowl, whisk together flour, cocoa powder, baking powder and salt. In a second large bowl, cream the butter and sugar. Beat in the egg, vanilla and orange extract. Beat in flour mixture until just combined.

Form dough into 3 logs 8" long, wrap in plastic and refrigerate 4 to 8 hours. Preheat oven to 350. Trim ends and slice each log into 1/4 inch slices. Place rounds on ungreased baking sheets and bake 10 to 12 minutes. Move to wire racks to completely cool.

Meanwhile, beat all the ingredients for the filling together until spreading consistently. Spread the flat side of half the cookies with filling and top each with a plain cookie. Refrigerate for an hour and enjoy, unless you are John.
