Citrus Tarragon Chicken Marinade

Serves 4 to 6

Ingredients

  • 1 lb boneless skinless chicken breasts, cubed
  • 1 lemon, juice and zest
  • 1 lime, juice and zest
  • 1 orange, juice and zest
  • 4 garlic cloves, minced
  • 2 Tbs tarragon, roughly chopped
  • ¼ c soy sauce
  • ¼ c oil
  • ½ tsp salt
  • ½ tsp pepper

Whisk all the marinade ingredients together in a large bowl. Add the chicken cubes, cover and refrigerate for 2 hours, up to 24. Thread the chicken onto flat metal skewers and grill until cooked through, 10 to 15 minutes. Goes great with grilled vegetables like pepper, onions and squash over rice.
