Broiled Cherry Tomatoes

Serves 4 to 6

Throw these in pasta, on risotto, potatoes or as a quick, no-work side dish. Just don't burn yourself on the molten insides when they first come out of the oven!


  • two cups cherry tomatoes
  • 1 Tbs olive oil
  • salt and pepper

Preheat the boiler. Put the cherry tomatoes in a baking dish or rimmed baking sheet. Toss with olive oil and spread out into a single layer. Sprinkle with salt and pepper. Broil until the tops are black and blistering, about 10 minutes. The tray might need to be rotated halfway through cooking if your broiler is uneven.
